Tex-mex black bean burgers

Sorry, this is late. This morning, I turned on “self-control”, which is my social media blocker, so I could get some writing done. Then I realized I hadn’t done my Pulse Wednesday update yet. Oops. Well, I’ve been busy just putting the finishing touches on Metro’s very first Asian Canadian film series.

If you sign up for her mailing list, she sends you a free e-book with a bunch of veggie burger recipes. This is the only recipe I’ve tried so far, but the rest of them also look simple, easy and tasty, which is just my style.

Nathan and I made these, and we didn’t run all of the ingredients through the food processor. Nathan thought it would be better if there were full chunks of corn in the burger. He cooked them on the bbq and learned the hard way that if you flip them too much, they start to fall apart. We doubled the recipe and froze the burger patties. We wrapped each patty in wax paper, and then put it in a baggie.

My friend Danica was visiting and so I served her one of these when she was over. She liked it so much that she couldn’t stop thinking about them, and she asked for the recipe.

In the initial recipe, Alissa, the recipe creator suggests serving the burger with an avocado on it, and I’d recommend that too. The contrast of the crispy patty and the creamy avocado is really nice.

Tex- Mex Black Bean Burgers
(serves 4) Time: 15 minutes

14 oz can black beans, drained
½ red onion, diced
2 garlic cloves
2 tsp cumin
1 tsp coriander
½ tsp chipotle powder
1 tsp olive oil
½ cup cooked corn kernels
½ cup panko

Toppings:
Red onion
Avocado
Feta etc.

1. Place all burger ingredients into food processor and blend. Shape into 4 patties.
2. Spray or coat large skillet with oil. Place over medium heat and cook patties about five minutes on each side, until browned.

(You could also heat these in the oven, which is what I did for Danica. Nathan pre-heated the oven to 350, and then I just let the burger cook until it was crispy, flipping it once or twice)
