Pinto bean tacos with pineapple salsa
For some reason, I can’t find the photo I took. So you get a photo of pinto beans sitting on my meditation cushion, near my aloe vera plant, in the sun, instead. I’m sorry.
For some reason, I get into some flavours, and I can’t get enough of them. Right now, I’m really into feta cheese. And avocado. And pineapple.
I really liked the rain this past weekend. I didn’t even complain when it rained on me at Beyonce. It was such a great concert and a wonderful performance. Other than that, I watched movies. I took Nathan to see Roman Holiday, and then I went to see The League of Exotique Dancers, which is about pioneering burlesque performers who are now in their 60s. I highly recommend it.
I found this recipe on Minimalist Baker. I didn’t make the taco shells, because I was lazy. But the original recipe tells you how to make your own taco shells out of tortillas, and I can definitely see the appeal of that after making this recipe. You can find the original recipe here- here

You need-
Taco shells or tortillas
Beans-
2 cups Mexican pinto beans
¼ tsp ground cumin
¼ tsp ground chili powder
Salt and pepper
Salsa-
¼ cup diced pineapple
½ cup diced tomato
3 tbsp diced jalapeno (I lost the jalapeno in my fridge, so I didn’t put it in it. I found it later)
3 tbsp diced red onion
¼ cup chopped cilantro or parsley
1 tbsp lime juice, plus more to taste
You can top with avocado, hot, sauce, lime juice, fresh chopped cilantro.
1. Add seasonings to pinto beans in a small pot and bring to a simmer over medium heat and then lower heat to low and simmer until serving. Taste and season.
2. Prepare pineapple salsa by adding ingredients to a small bowl and tossing to coat. Taste and adjust flavours as needed, adding more salt for flavour balance, lime for acidity or pineapple for sweetness. Set aside.
3. Fill tacos with pinto beans, pineapple and other toppings. (I put avocado on mine)
I found this made about 4 small tacos. I would recommend preparing the shells like they did on Minimalist Baker, or buying a bigger taco shell. Or you could mix it up and just make these on taco chips because that would be nice too!
